Truffles and earthy potatoes go well together. If you are cooking the spuds with some sort of fat – butter, cream, olive oil, goose fat this really lets the truffle flavour bond. I love this French recipe with thinly sliced potatoes and caramelised onions cooked in beef stock and butter. The truffle is shaved over the finished dish. In the video I used the tuber brumale that we find growing wild on our doorstep but any black truffle will work.
